1 can (5 oz) skipjack or yellowfin tuna, drained
2 Tbsp plain Greek yogurt
1/2 Tbsp dijon mustard (or regular mustard)
Juice of 1/2 lemon (about 1 Tbsp)
1/4 cup corn (canned or thawed frozen)
1/4 cup diced red onion
1 Tbsp dill relish or capers
1/2 tsp garlic powder
1/4 tsp black pepper
1/4 cup shredded mozzarella cheese (or cheese of choice)
1 large burrito-sized wrap (at least 10 inches)
Olive oil or cooking spray, for the pan
Prepare the tuna filling In a bowl, mix tuna, mayonnaise, mustard (if using), celery, red onion, salt, and pepper until well combined. Assemble the wraps Lay tortillas flat and spread the tuna mixture evenly over each. Sprinkle cheese on top. Wrap Fold in the sides and roll tightly into a wrap. Toast the wraps Heat butter or oil in a skillet over medium heat. Place wraps seam-side down and cook for 2–3 minutes per side until golden brown and crispy, and the cheese is melted. Serve Slice in half and serve warm.
Add sliced tomatoes or spinach for extra freshness. Use whole wheat tortillas for a healthier option. Swap mayo for Greek yogurt for a lighter version. Best served fresh while the cheese is melty and the wrap is crisp.
