Amazing Rotel Dip Recipe

This Amazing Rotel Dip Recipe is a creamy, cheesy, and slightly spicy appetizer that comes together in just 20 minutes. Ingredients

  • 1 pound ground beef
  • 1 pound Velveeta cheese, cubed
  • 1 can (10 ounces) Rotel diced tomatoes and green chilies, undrained
  • 1 can (10.75 ounces) condensed cream of mushroom soup
  • 1/2 cup milk
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste

Instructions

  1. Brown the ground beef in a large skillet over medium-high heat. Drain off excess fat.
  2. In a large pot, combine cubed Velveeta, undrained Rotel, cream of mushroom soup, and milk. Cook over medium-low heat, stirring frequently, until cheese is melted and mixture is smooth.
  3. Stir in the cooked ground beef, chili powder, and garlic powder. Cook for 5 more minutes, stirring occasionally, until hot and bubbly.
  4. Season with salt and pepper to taste. Serve immediately with tortilla chips, crackers, or vegetables.

Notes

For a spicier dip, use hot Rotel or add a minced jalapeno. To make it in a slow cooker, brown the beef first, then combine all ingredients in the slow cooker and cook on low for 2-3 hours.
