Savory Squishy Dumplings With Fresh Garlic And Herbs

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, cold and cubed
  • 3/4 cup whole milk
  • 1 large egg
  • 2 tablespoons fresh parsley, finely chopped
  • 2 tablespoons fresh chives, finely chopped
  • 1 tablespoon fresh dill, finely chopped
  • 4 cloves fresh garlic, minced
  • 1/4 cup grated Parmesan cheese
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • Salt and black pepper to taste

Instructions

  1. In a large bowl, whisk together flour, baking powder, and salt.
  2. Cut in cold butter until mixture resembles coarse crumbs.
  3. In a small bowl, whisk milk and egg. Pour into dry ingredients and stir until just combined.
  4. Fold in parsley, chives, dill, garlic, and Parmesan cheese.
  5. In a large pot, bring broth and olive oil to a gentle simmer. Season with salt and pepper.
  6. Drop rounded tablespoons of dough into the simmering broth. Cover and steam for 12-15 minutes until puffed and cooked through.
  7. Serve warm.

Notes

Do not overmix the dough for the best squishy texture. For a vegan version, use vegan butter, plant-based milk, and a flax egg.
