These Blueberry Cheesecake Crumble Bars (Sweet & Creamy) feature a buttery shortbread crust, a luscious cheesecake layer, and a vibrant blueberry topping, all finished with a golden crumble. They are the perfect make-ahead dessert for any gathering.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 teaspoon salt
  • 8 ounces cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups fresh blueberries
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch pan with parchment paper.
  2. In a bowl, mix flour, 1/2 cup sugar, and salt. Cut in butter until crumbly. Reserve 1/2 cup for topping.
  3. Press remaining crumb mixture into pan. Bake 12-15 minutes until lightly golden.
  4. Beat cream cheese and 1/4 cup sugar until smooth. Beat in egg and vanilla.
  5. In a saucepan, combine blueberries, 1/4 cup sugar, lemon juice, and cornstarch. Cook over medium heat until thickened, about 5 minutes.
  6. Pour cheesecake filling over baked crust. Spoon blueberry mixture on top. Sprinkle with reserved crumble.
  7. Bake 30-35 minutes until edges are set. Cool completely, then refrigerate at least 2 hours before slicing.

Notes

For a gluten-free version, use a 1:1 gluten-free flour blend. You can substitute frozen blueberries for fresh; do not thaw them first.
