Breakfast Quesadilla (crispy): Your Morning Delight Awaits!

Crispy golden quesadillas filled with fluffy eggs, melted cheese, and savory fillings. A quick and satisfying breakfast to start your day right.

Ingredients

4 large eggs
1 cup shredded cheese (cheddar or your choice)
4 flour tortillas
1/2 cup diced bell peppers
1/2 cup cooked and crumbled sausage or bacon (optional)
Salt and pepper to taste
Cooking oil or butter (for frying)

Instructions

Prepare eggs:
In a bowl, whisk eggs with salt and pepper.
Cook eggs:
Heat a skillet over medium heat with a little oil or butter. Scramble the eggs until just set. Remove and set aside.
Assemble quesadilla:
Place one tortilla in the skillet. Sprinkle half of the cheese on one side. Add scrambled eggs, bell peppers, and sausage or bacon if using.
Fold and cook:
Top with remaining cheese and fold the tortilla over. Cook for 2–3 minutes per side until golden brown and crispy.
Repeat:
Repeat with remaining tortillas and filling.
Serve:
Slice into wedges and serve hot.
