Chickpea Feta Avocado Salad

Fresh and vibrant salad packed with creamy avocado, tangy feta, and hearty chickpeas. A quick and healthy dish full of flavor.

Ingredients

1 (15-ounce / 425g) can chickpeas, drained and rinsed
1 avocado, pitted and diced
4 ounces (115g) feta cheese, crumbled
1/2 cup (75g) red onion, thinly sliced
1/2 cup (50g) fresh parsley, chopped
1/4 cup (25g) fresh mint, chopped
3 tablespoons (45 ml) olive oil
2 tablespoons (30 ml) fresh lemon juice
1 clove garlic, minced
1/2 teaspoon dried oregano
Salt and pepper to taste

Instructions

Combine ingredients:
In a large bowl, add chickpeas, diced avocado, feta cheese, red onion, parsley, and mint.
Make dressing:
In a small bowl or jar, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper.
Toss salad:
Pour dressing over the salad and gently toss until everything is evenly coated.
Serve:
Serve immediately or chill for later for enhanced flavor.

Notes

Add cherry tomatoes or cucumber for extra freshness.
For a vegan version, omit feta or use a plant-based alternative.
Best enjoyed fresh to keep avocado from browning.
