Cottage Cheese Chocolate Lava Mug Cake

A quick, protein-packed single-serving mug cake with a molten chocolate center, made healthier with cottage cheese.

Ingredients

  • 1/2 cup cottage cheese (full-fat or low-fat, drained slightly)
  • 3 tablespoons unsweetened cocoa powder
  • 2 tablespoons maple syrup or honey
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon all-purpose flour (or almond flour for gluten-free)
  • 1/4 teaspoon baking powder
  • 1 tablespoon dark chocolate chips or chopped dark chocolate
  • Pinch of sea salt

Instructions

  1. In a small bowl, whisk together the cottage cheese, cocoa powder, maple syrup, egg, and vanilla extract until smooth.
  2. In another small bowl, stir together the flour, baking powder, and salt.
  3. Fold the dry ingredients into the wet mixture until just combined.
  4. Lightly grease a 12-ounce microwave-safe mug.
  5. Pour half of the batter into the mug. Press the dark chocolate chips into the center, then cover with the remaining batter.
  6. Microwave on high for 45 to 60 seconds, until the top is set but the center is slightly jiggly.
  7. Let rest for 1 minute, then serve immediately.

Notes

For a dairy-free version, use dairy-free cottage cheese. For a gluten-free version, use almond flour. Microwave times vary; start with 45 seconds and adjust as needed.
