I love this Chicken Caesar Pasta Salad for picnics and parties! It’s creamy, flavorful, and ready in 25 minutes. Perfect with homemade dressing.
8 oz pasta, such as fusilli or penne
2 chicken breasts, cooked and shredded or diced
1 head romaine lettuce, chopped
1/2 cup grated Parmesan cheese
1 cup croutons
For the Caesar dressing:
1/2 cup mayonnaise
2 tablespoons lemon juice
1 teaspoon Dijon mustard
2 cloves garlic, minced
1/4 cup grated Parmesan cheese
Salt and pepper to taste
2 anchovy fillets, minced (optional)
Cook the pasta according to package instructions until al dente. Drain and rinse under cold water.
In a bowl, whisk together all dressing ingredients until smooth.
In a large bowl, combine the cooled pasta, shredded chicken, chopped romaine, and grated Parmesan.
Pour the dressing over the salad and toss to coat evenly.
Add croutons just before serving.
For best results, add croutons at the last minute to maintain crispiness. Adjust seasoning to taste.
