Deliciously Chewy Churro Crinkle Cookies: A Sweet Twist on a Classic Treat!

These soft, chewy cookies are coated in cinnamon sugar and have a beautiful crinkled top. They taste just like a churro but in cookie form.

Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup granulated sugar (for coating)
  • 1 tablespoon ground cinnamon (for coating)

Instructions

  1. Preheat oven to 350 degrees F. Line baking sheets with parchment paper.
  2. In a large bowl, cream together butter and 1 cup sugar until light and fluffy.
  3. Beat in egg and vanilla.
  4. In a separate bowl, whisk together flour, baking powder, salt, and 1/2 teaspoon cinnamon.
  5. Gradually add dry ingredients to wet ingredients, mixing until just combined.
  6. Cover dough and chill for at least 30 minutes.
  7. In a shallow bowl, combine 1/2 cup sugar and 1 tablespoon cinnamon.
  8. Roll chilled dough into 1-inch balls, then coat generously in cinnamon-sugar mixture.
  9. Place 2 inches apart on prepared baking sheets.
  10. Bake for 10-12 minutes until edges are set and tops are crinkled.
  11. Cool on baking sheet for 5 minutes, then transfer to a wire rack.

Notes

For extra chewiness, chill the dough for up to 2 hours. The dough can be frozen for up to 3 months.
