Ingredients

  • 2 cups fresh raspberries
  • 1/2 cup granulated sugar, divided
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon unflavored gelatin powder
  • 2 tablespoons cold water
  • 1 1/2 cups heavy whipping cream
  • 1 teaspoon vanilla extract
  • 3 large egg whites
  • 1/4 teaspoon cream of tartar
  • Pinch of salt

Instructions

  1. Cook raspberries, 1/4 cup sugar, and lemon juice until syrupy. Strain to remove seeds. Cool.
  2. Bloom gelatin in cold water, then dissolve and stir into cooled raspberry puree.
  3. Whip cold cream with remaining 1/4 cup sugar and vanilla to stiff peaks.
  4. Whip egg whites with cream of tartar and salt to stiff peaks.
  5. Fold one-third of cream into raspberry mixture. Then fold in remaining cream.
  6. Gently fold in whipped egg whites in two additions.
  7. Divide into 6 glasses. Chill for at least 4 hours. Garnish with raspberries before serving.

Notes

For a vegan version, use coconut cream and aquafaba. For a richer mousse, fold in 4 oz of softened cream cheese with the whipped cream. Always chill for the full 4 hours for best results.
