Fluffy 3-Ingredient Oatmeal Cookies

Soft, fluffy, and incredibly easy 3-ingredient oatmeal cookies made with bananas, oats, and peanut butter. A perfect healthy dessert.

Ingredients

  • 2 large ripe bananas, mashed (about 1 cup)
  • 1 cup old-fashioned rolled oats
  • 1/4 cup creamy peanut butter (or any nut butter)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mash bananas until smooth.
  3. Add oats and peanut butter, stir until a thick dough forms.
  4. Scoop rounded tablespoons of dough onto the baking sheet, spacing 2 inches apart. Flatten slightly.
  5. Bake for 10-12 minutes until edges are golden. Cool on sheet for 5 minutes, then transfer to a wire rack.

Notes

For sweeter cookies, add 1 tbsp maple syrup. For chocolate chips, fold in 1/4 cup. These Fluffy 3-Ingredient Oatmeal Cookies are best enjoyed warm.
