These Heavenly Summer Peach Bars – Buttery, Fruity & Easy to Bake feature a buttery shortbread crust, a luscious fresh peach filling, and a crumbly topping. They are the perfect summer dessert.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/2 cup cold unsalted butter, cubed
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 4 cups fresh peaches, peeled and sliced (about 4 large peaches)
  • 1/4 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg

Instructions

  1. Preheat oven to 375°F (190°C). Line an 8×8-inch pan with parchment paper.
  2. In a bowl, whisk flour, 1/2 cup sugar, and salt. Cut in butter until coarse crumbs form. Stir in egg yolk and vanilla.
  3. Press 2/3 of the mixture into the pan. Bake crust for 12-15 minutes.
  4. Toss peaches with 1/4 cup sugar, cornstarch, lemon juice, cinnamon, and nutmeg.
  5. Spread peach mixture over hot crust. Sprinkle with remaining crumb mixture.
  6. Bake for 35-40 minutes until bubbly and golden. Cool completely, then chill for at least 1 hour before cutting.

Notes

For best results, use ripe but firm peaches. Chilling the bars overnight enhances the flavor and texture.
