These easy No-Bake Raspberry Coconut Bliss Balls are a healthy, vegan, and gluten-free snack made with cashews, coconut, and freeze-dried raspberries. Perfect for a quick energy boost.

Ingredients

  • 1 cup raw cashews
  • 1/2 cup unsweetened shredded coconut, plus more for rolling
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 1/2 cup freeze-dried raspberries
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Place cashews in a food processor and pulse until a fine meal forms.
  2. Add shredded coconut, maple syrup, melted coconut oil, freeze-dried raspberries, vanilla, and salt. Process until well combined and the mixture clumps together.
  3. Roll mixture into 1-inch balls. Roll each ball in extra shredded coconut.
  4. Place on a parchment-lined baking sheet and refrigerate for at least 30 minutes.
  5. Serve chilled or at room temperature.
