– 1 pound ground beef (80/20 blend)
– 8 small flour tortillas (6-inch)
– 8 slices American cheese

– 1/2 cup shredded lettuce
– 1/4 cup finely diced white onion
– 1/4 cup mayonnaise
– 2 tablespoons ketchup
– 1 tablespoon yellow mustard
– 1 teaspoon garlic powder
– 1 teaspoon onion powder
– 1/2 teaspoon salt
– 1/2 teaspoon black pepper
– 2 tablespoons unsalted butter, softened
1. In a small bowl, whisk together mayonnaise, ketchup, and yellow mustard. Set aside.
2. Divide ground beef into 8 equal portions (about 2 ounces each). Roll each into a ball.
3. Heat a large cast-iron skillet or griddle over high heat until smoking.
