Ingredients

  • 8 ounces short pasta (fusilli or rotini)
  • 1 pint cherry tomatoes, halved
  • 8 ounces fresh mozzarella pearls
  • 1/2 cup basil pesto
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1/4 cup fresh basil leaves, chopped
  • Salt and pepper to taste

Instructions

  1. Cook pasta in salted water until al dente. Drain and rinse under cold water.
  2. In a large bowl, combine cooled pasta, halved cherry tomatoes, mozzarella pearls, and chopped basil.
  3. In a small bowl, whisk together pesto, olive oil, and balsamic vinegar.
  4. Pour dressing over pasta mixture and toss gently to coat.
