Ingredients

  • 1 pound boneless, skinless chicken breasts, sliced in half horizontally
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/4 cup all-purpose flour
  • 2 tablespoons neutral oil, such as avocado or canola, for frying
  • 4 large flour tortillas (10-inch)
  • 1/2 cup shredded sharp cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1/4 cup hot honey, plus more for drizzling
  • 1/4 cup mayonnaise
  • 1 tablespoon sriracha or hot sauce
  • 1 cup shredded iceberg lettuce
  • 1/2 cup pickled jalapeños, drained

Instructions

  1. Place chicken breasts between plastic wrap and pound to an even 1/4-inch thickness. Season both sides with salt, pepper, garlic powder, and smoked paprika. Dredge in flour, shaking off excess.
  2. Heat oil in a large non-stick skillet over medium-high heat. Cook chicken for 3-4 minutes per side until golden and cooked through (165°F internal temperature). Let rest, then slice into strips.
  3. Mix mayonnaise and sriracha in a small bowl. Lay tortillas flat and spread spicy mayo down the center. Divide cheese, chicken, lettuce, and jalapeños among tortillas. Drizzle with hot honey. Fold in sides and roll tightly.
  4. Return skillet to medium heat. Cook wraps seam-side down for 2-3 minutes per side until golden and crispy. Slice in half and drizzle with more hot honey. Serve immediately.

Notes

For extra heat, add cayenne to the flour mixture. To make ahead, prepare the chicken and sauce separately, then assemble and cook just before serving.
