The Best Ground Beef Queso Dip

A rich, creamy, and meaty cheese dip that is the ultimate party appetizer. Made with seasoned ground beef, three types of cheese, and a hint of spice.

Ingredients

  • 1 pound ground beef (80/20)
  • 1 tablespoon olive oil
  • 1/2 cup yellow onion, finely diced
  • 2 cloves garlic, minced
  • 1 (10-ounce) can diced tomatoes and green chilies (Rotel), undrained
  • 1 (8-ounce) block cream cheese, softened and cubed
  • 1 (8-ounce) block processed American cheese, cubed (like Velveeta)
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup whole milk
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 1/4 cup fresh cilantro, chopped (for garnish)
  • Tortilla chips for serving

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add ground beef and diced onion. Cook for 5-7 minutes until browned. Add garlic and cook for 1 minute. Drain excess fat.
  2. Reduce heat to medium-low. Add undrained tomatoes and green chilies to the skillet.
  3. Add cream cheese, American cheese, cheddar cheese, and milk. Stir in chili powder, cumin, and smoked paprika.
  4. Stir continuously for 5-7 minutes until all cheese is melted and dip is smooth. Season with salt and pepper.
  5. Remove from heat, garnish with cilantro, and serve immediately with tortilla chips.

Notes

For a thinner dip, add an extra 1/4 cup of milk. For a spicier version, add a diced jalapeno with the onion.
