Loaded Potato Meatloaf

A juicy and flavorful meatloaf topped with creamy mashed potatoes, melted cheddar cheese, crispy bacon, and green onions. The ultimate comfort food dinner.

Ingredients

  • 2 pounds ground beef (80/20)
  • 1 cup breadcrumbs
  • 2 large eggs
  • 1/2 cup milk
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • 1/4 cup ketchup
  • 2 tablespoons Worcestershire sauce
  • 4 cups prepared mashed potatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked and crumbled bacon
  • 1/4 cup chopped green onions

Instructions

  1. Preheat oven to 350 degrees Fahrenheit.
  2. In a large bowl, combine ground beef, breadcrumbs, eggs, milk, onion, garlic, salt, pepper, thyme, paprika, ketchup, and Worcestershire sauce. Mix gently until just combined.
  3. Transfer the mixture to a greased 9×13 inch baking dish and shape into a loaf.
  4. Bake for 45 to 55 minutes, until internal temperature reaches 160 degrees Fahrenheit.
  5. Remove from oven and spread mashed potatoes evenly over the top of the meatloaf.
  6. Sprinkle cheddar cheese and crumbled bacon over the potatoes.
  7. Return to oven and bake for 10 to 15 minutes more, until cheese is melted and bubbly.
  8. Let rest for 10 minutes, then garnish with green onions. Slice and serve.

Notes

For a spicier version, add 1/2 teaspoon cayenne pepper to the meatloaf mixture. You can substitute ground turkey for the beef if desired.
