Ingredients

  • 1 1/2 pounds boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 3 tablespoons all-purpose flour
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes in oil, drained and chopped
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup freshly grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons fresh basil, chopped

Instructions

  1. Slice chicken breasts in half horizontally to create thin cutlets. Season both sides with salt, pepper, garlic powder, and smoked paprika. Lightly dredge in flour, shaking off excess.
  2. Heat olive oil in a large skillet over medium-high heat. Cook chicken in batches for 4-5 minutes per side until golden and cooked through. Transfer to a plate.
  3. Reduce heat to medium and add butter. Cook garlic for 30 seconds, then add sun-dried tomatoes for 1 minute.
  4. Pour in heavy cream and chicken broth, scraping up browned bits. Simmer, then stir in Parmesan, oregano, and red pepper flakes. Cook for 2-3 minutes until thickened.
  5. Return chicken to skillet, spoon sauce over top, and simmer for 2-3 minutes. Garnish with basil and serve.

Notes

For a lighter sauce, use half-and-half instead of heavy cream. Chicken thighs can be substituted for breasts. Store leftovers in the refrigerator for up to 3 days.
