One-Pot French Onion Chicken Rice Dinner

This rich and savory One-Pot French Onion Chicken Rice Dinner combines caramelized onions, tender chicken, and fluffy rice with melted Gruyere cheese for a comforting, complete meal. Easy cleanup and incredible flavor make it a weeknight winner.

Ingredients

  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 4 large yellow onions, thinly sliced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 cloves garlic, minced
  • 1 1/2 pounds boneless, skinless chicken thighs
  • 1 cup long-grain white rice
  • 1/2 cup dry white wine
  • 3 cups low-sodium beef broth
  • 1 cup low-sodium chicken broth
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 1 cup shredded Gruyere cheese
  • 1/2 cup shredded mozzarella cheese
  • Fresh parsley, chopped, for garnish

Instructions

  1. Melt butter and olive oil in a large Dutch oven over medium heat. Add onions, salt, and pepper. Cook, stirring occasionally, for 25 to 30 minutes until deeply caramelized.
  2. Stir in garlic and cook for 1 minute. Season chicken thighs and nestle them into the pot. Cook 4 to 5 minutes per side until lightly browned.
  3. Add rice and stir to coat. Pour in wine and simmer for 2 minutes, scraping the bottom. Add beef broth, chicken broth, thyme, and bay leaf. Bring to a boil, then reduce heat to low. Cover and simmer for 20 to 25 minutes until rice is tender and chicken is cooked through. Remove bay leaf.
  4. Preheat broiler. Sprinkle Gruyere and mozzarella over the top. Broil for 2 to 3 minutes until bubbly and golden. Garnish with parsley and serve.

Notes

For a vegetarian version, omit chicken and add 2 cups sliced mushrooms and 1 can chickpeas. Use vegetable broth. For gluten-free, ensure broth and wine are certified gluten-free.
