Ingredients

– 2 1/2 cups all-purpose flour
– 1 teaspoon baking powder
– 1/2 teaspoon salt
– 1 cup unsalted butter, softened
– 1 1/2 cups granulated sugar
– 1 large egg
– 1 teaspoon vanilla extract
– 1 1/2 cups fresh strawberries, diced
– 1 cup powdered sugar
– 2 tablespoons milk
– 1/2 teaspoon strawberry extract (optional)

Instructions

1. Preheat oven to 350 degrees F. Line a 9×13 inch pan with parchment paper.
2. Whisk flour, baking powder, and salt in a medium bowl.
3. In a large bowl, cream butter and sugar until light and fluffy. Beat in egg and vanilla.
4. Gradually add dry ingredients to wet, mixing until just combined. Fold in strawberries.
5. Press dough evenly into prepared pan. Bake for 22-25 minutes until edges are golden and center is set.
6. Cool completely on a wire rack.
7. For the glaze, whisk powdered sugar, milk, and strawberry extract. Drizzle over cooled bars. Let set 15 minutes before cutting.

Notes

Dough will be sticky. Use parchment paper to press it into the pan. Store in an airtight container.
