Ingredients

  • 1 pound elbow macaroni
  • 1 cup mayonnaise
  • 1/4 cup apple cider vinegar
  • 2 tablespoons Dijon mustard
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup finely chopped celery
  • 1 cup finely chopped red bell pepper
  • 1 cup frozen peas, thawed
  • 1/2 cup finely chopped red onion
  • 1/2 cup shredded carrot
  • 1/4 cup chopped fresh parsley

Instructions

  1. Cook macaroni according to package directions in salted boiling water until al dente. Drain and rinse with cold water. Drain thoroughly.
  2. In a large bowl, whisk together mayonnaise, apple cider vinegar, Dijon mustard, sugar, salt, and pepper.
  3. Add cooled macaroni, celery, red bell pepper, peas, red onion, carrot, and parsley to the bowl. Toss to coat evenly.
  4. Cover and refrigerate for at least 1 hour before serving.
