The Ultimate Frito Cowboy Cabbage

Frito Cowboy Cabbage

A quick and easy side dish featuring tender cabbage, black beans, and crunchy Fritos corn chips, all seasoned with smoky spices.

Ingredients

  • 1 medium head green cabbage, cored and thinly sliced
  • 1/2 cup olive oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 (10-ounce) can diced tomatoes with green chilies, drained
  • 1 cup frozen corn kernels
  • 1 1/2 cups Fritos original corn chips
  • 1/2 cup shredded cheddar cheese (optional)
  • Fresh cilantro for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add onion and cook until softened, about 4-5 minutes. Add garlic and cook 30 seconds.
  2. Add cabbage, smoked paprika, cumin, salt, and pepper. Cook, stirring occasionally, for 8-10 minutes until cabbage is tender.
  3. Stir in black beans, diced tomatoes, and corn. Cook 5 minutes until heated through.
  4. Remove from heat and fold in Fritos. Top with cheese if desired and garnish with cilantro. Serve immediately.

Notes

For a spicier version, add a diced jalapeno with the onion. For a main dish, add cooked ground beef or chorizo.
