Ingredients

  • 1 1/2 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 cup plain panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs, beaten
  • 2 tablespoons olive oil
  • 8 ounces block feta cheese, cut into 1-inch cubes
  • 1/3 cup hot honey
  • 2 tablespoons unsalted butter, melted
  • 1/4 teaspoon red pepper flakes (optional)
  • Fresh parsley, chopped, for garnish

Instructions

  1. Preheat oven to 400 degrees Fahrenheit. Line a baking sheet with parchment paper.
  2. In a shallow bowl, combine panko, Parmesan, garlic powder, onion powder, smoked paprika, salt, and pepper.
  3. In another bowl, beat the eggs. Dip chicken cubes in egg, then coat in breadcrumb mixture. Place on prepared baking sheet.
  4. Drizzle olive oil over chicken. Bake for 15 minutes, flip, and bake for another 10-12 minutes until golden and cooked through.
  5. In a small saucepan, combine hot honey, melted butter, and red pepper flakes. Warm over low heat until combined.
  6. Remove chicken from oven. Scatter feta cubes over chicken. Drizzle with hot honey sauce.
  7. Return to oven and bake for 5-7 minutes until feta is warm and softened.
  8. Garnish with parsley and serve immediately.
