Traditional Mexican Tostadas: A 30-Minute Meal Your Grandkids Will Love

A quick and delicious 30-minute meal featuring crispy tostada shells, seasoned refried beans, shredded chicken, and fresh toppings. Perfect for a fun family dinner.

Ingredients

  • 8 tostada shells
  • 1 can (16 ounces) refried beans
  • 1/2 cup water or chicken broth
  • 1 tablespoon olive oil
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon salt
  • 2 cups shredded cooked chicken
  • 1 cup shredded lettuce
  • 1 cup crumbled queso fresco
  • 1/2 cup sour cream or Mexican crema
  • 1/4 cup chopped fresh cilantro
  • 1 avocado, sliced
  • 1/2 cup salsa
  • 1/4 cup pickled jalapeƱos (optional)
  • 1 lime, cut into wedges

Instructions

  1. In a small saucepan over medium heat, combine the refried beans, water or broth, olive oil, cumin, chili powder, and salt. Stir until smooth and heated through.
  2. Warm the shredded chicken in a skillet with a little oil if desired.
  3. To assemble, place a tostada shell on a plate. Spread a layer of the seasoned beans on top.
  4. Add the warm chicken, then lettuce, cheese, crema, avocado, salsa, and cilantro.
  5. Add pickled jalapeƱos if using. Squeeze lime juice over the top.
  6. Serve immediately.

Notes

For a vegetarian version, omit the chicken and use double beans or black beans. Store components separately for best results.
