Ingredients

  • 1 cup high-quality dark chocolate chips (or semi-sweet)
  • 1/2 cup creamy peanut butter (natural, no sugar added preferred)
  • 2 tablespoons powdered sugar (or maple syrup for a refined sugar-free option)

Instructions

  1. Line a mini muffin tin with paper liners.
  2. Melt dark chocolate chips in a microwave-safe bowl in 30-second intervals, stirring between each, until smooth.
  3. Spoon a small amount of melted chocolate into the bottom of each liner to cover the base.
  4. Place the tin in the refrigerator for 5 minutes to set the chocolate.
  5. In a bowl, combine peanut butter and powdered sugar, stirring until a thick paste forms.
  6. Remove the tin from the fridge and spoon a dollop of the peanut butter mixture into the center of each chocolate layer.
  7. Cover the peanut butter completely with the remaining melted chocolate.
  8. Tap the tin on the counter to smooth the tops.
  9. Return the tin to the refrigerator for at least 30 minutes, or until firm.
  10. Peel away liners and serve.
